Cowboy Cookies
1 cup sugar
1 cup brown sugar
2 eggs
1 cup butter
1 teaspoon vanilla
2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 1/2 cups rolled oats
2 cups chocolate chips
In a large bowl add, sugar, brown sugar and eggs. Melt butter and pour in bowl with sugars and eggs, mix well and stir in vanilla. Add flour, baking powder, baking soda and salt, mixing well. Stir in oats and chocolate chips. Drop dough by rounded tablespoons about 2" apart onto an ungreased cookie sheet. Bake at 350 degrees for 10-12 minutes or just until the edges of the cookies begin to turn golden brown.
