Sugar Cookie Bars

Frosted sugar cookies are a favorite around here, but honestly they are my least favorite cookie to make. Mixing the dough, letting it chill, rolling, cutting, baking, more rolling, more cutting...it's too much like work, so when I found this recipe I knew I had to try it! Let me tell you, my family may never get "regular" frosted sugar cookies again!

Sugar Cookie Bars

1/2 cup butter, softened
1 cup sugar
2 eggs
1 teaspoon vanilla
2 1/2 cups flour
1/2 teaspoon salt
1/4 teaspoon baking soda

Cream butter and sugar until fluffy. Add eggs and vanilla; mix well. Stir in flour, salt and baking soda and mix just until combined. Spread on a greased 9x13 baking pan. Bake at 350 degrees for 15 -20 minutes, until light golden brown. Let cool.

Frosting

1/4 cup butter, softened
1/4 cup shortening
1/2 teaspoon vanilla
2 cups powdered sugar
2 tablespoons milk

Combine butter and shortening until smooth and creamy. Add vanilla. Beat in powdered sugar and milk until smooth and spreading consistency.

I'm going to try these tonight I think....I'm feeling a little low, and sometimes baking gets me out of my funk....

PS. the vanilla is missing from the cookie part...it's mentioned in the directions, but not listed...

It should be 1 teaspoon of vanilla...I have it corrected now. Thank you for pointing out the error!

I made these for a meeting today and they were great! I followed your recipe except I substituted cream cheese for the shortening in the frosting.
Thanks for sharing it.
