Chocolate Zucchini Loaf
1/2 cup sugar
1/2 cup brown sugar
2 eggs
1/2 cup vegetable oil
1 teaspoon vanilla
1 cup flour
1/2 cup cocoa
1 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
1/2 teaspoon cinnamon
1 1/2 cups shredded zucchini
1/2 cup mini chocolate chips
Preheat the oven to 350F; lightly grease an 8 1/2" x 4 1/2" loaf pan. In a large mixing bowl, beat together the sugar, brown sugar, eggs, oil
and vanilla. Add the flour, cocoa, baking soda, baking powder, salt, and cinnamon,
mixing until well combined. Stir in the zucchini and chocolate chips. Pour the batter into the prepared pan; sprinkle a few chocolate chips over the top, if desired. Bake for 50-60 minutes,
or until a toothpick inserted into the center comes out clean. Let cool
for 10 to 15 minutes before turning it out of the pan onto a rack. Cool
completely before slicing.
