Aunt Hazel's Bread & Butter Pickles

The problem with a lot of old recipes is that they are often short on details making them difficult to duplicate. For instance, this pickle recipe simply listed the ingredients and said "Bring to a boil & can." but fortunately that's about all it takes to make Aunt Hazel's famous Bread & Butter Pickles!

Aunt Hazel's Bread & Butter Pickles

1 quart sliced cucumbers
2 onions, sliced
1 cup vinegar
1 cup sugar
1 teaspoon salt
1 teaspoon turmeric
1 teaspoon mustard seed

Combine vinegar, sugar, salt, turmeric and mustard seed in a stainless steel pot and bring to a boil. When sugar is completely dissolved, add cucumbers and onions and return to boiling. Pack into hot, sterilized jars leaving a 1/2 inch head space and secure lids. If desired, process in a hot water bath for 10 minutes or simply store in the refrigerator for up to 4 weeks.

My mom used to make bread and butter pickles all the time - loved them on sandwiches. But I won't go buy them at a store. Somethings are just better homemade.

This almost sounds toooo simple. What about layering the cucumebers with ice and salt in a big bowl in the fridge for several hours. I'll admit, I've not made pickles since 1993, but I do remember that part. I bet Aunt Hazel was one smart cookie and decided to go the easier route. I love bread and butters and maybe I'll have some time to give these a try. Thanks for sharing.

I love the old recipes! I have one from the mother of a former coworker (we worked together in the early 80s) that calls for a "pinch" of salt with each egg that you add. Thankfully, that's easy to figure out! How did you determine the correct amount of the ingredients in this recipe? It looks good!

My Mom used to make pickles but it was a longer process than that. I don't know what all she did or what kind they were. An old recipe no doubt. My Mother In Law would make watermelon rind pickles that were just like eating candy.

Those pickles look lovely! I should really try to make them from the cucumbers in our garden. Hmmmm....

Looks just like what my mom used to "jar up and can"...oh how I miss them! Somehow they were never quite the same when I would do them, so I don't anymore! You are right about the old recipes, and I find myself doing the same to my daughter, with my answers being "I just add a little", or "until it seems right" ;>), I really need to do better with my answers, being more careful with the written version! Thanks for the reminder! Have a great week!

Thanks for the recipe. I almost never get to buy bread and butter pickles because almost every jar I find is made with corn syrup (allergic). I don't can, but if I can find some small cucumbers, I could certainly make some and refrigerate them. They disappear fast anyway!

Yum! When my kids were little I mad pickled gherkins every summer, smae thing as your pickle but left whole. There was a farm in the next town that grew them. I think my DD had cheese and gherkin sandwiches for about four years.
