Oatmeal Cookies

I have yet to eat a cookie that I didn't like and it would be really hard for me to pick a favorite, but if I had to choose, these would definitely be in the top five on my favorite cookies list!

Oatmeal Cookies

1/2 cup shortening
1/2 cup sugar
1/2 cup brown sugar
1 egg
1/2 teaspoon vanilla
1 cup flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cup quick-cooking oatmeal
1/4 cup chopped walnuts (optional)
1/4 cup sugar for rolling

In a large mixing bowl, cream together shortening, sugar and brown sugar; beat in egg and vanilla. Mix flour, baking powder, baking soda and salt together and stir into creamed mixture. Stir in oatmeal and nuts. Form into small balls and roll in additional sugar. Place on ungreased cookie sheet. Bake at 350 degrees for 10 to 12 minutes.
